Manfiold and elbow gasket replacement / torque and bolt question

Iirc the torque spec for manifold/riser is 25-35 lb/ft. Only reason I remember is to me it seems low but it is the spec. Can't recall ever using a torque wrench on those bolts, my method is tighten, run it and move on the next project, ymmv

Clean where it needs to be, would be a pleasure to diagnose irl. At this point, given information would suggest you're beyond internet help. I have no idea why you've removed valve covers/displaying photos of the flywheel/ring gear

    Volvo penta inboard tilt trim

Could be the breaker/fuse or "resetable" fuse for your trim. Volvo did/does many different styles of trim system power supply. Some on the breaker panel you've pictured, others are divorced from there. An ohm meter and oem wiring diagram/visual confirmation of wire routing will help you immensely

Mystery issues with Volvo Penta since I/O service

Not saying anything about your choice of service provider but if they didn't recognize the wrong belt (see: provided) install either their not honest or have better things to do. And, if they could not initially service the serp belt I'd be suspect of their handling of rebuilt props. Especially...

    3.0 Mercruiser Choking

Guessing by "adjusted pitch" you mean rerouted the vent line and cleaned the "sludge and gunk" out? Glad your issue is resolved and would suggest if all the above is true you should replace the entire vent line with approved fuel rated hose and inspect/replace the other hoses/fuel lines...
