    Sportcraft Li'l Sport, worth restoring?

its worth more sentimentally to you than it would be to restore to flip. cool little boat. I would restore it just for the cool factor. would make a fun little dinghy sitting on the swim platform of a 50 footer.

    Water in the intake

pull the elbow. look at the joint faces. not the outside of it. you are in troubleshooting mode. you have about a day to clean that water out of the motor and either have the motor running, or need to flush all the surfaces with alcohol then oil until you get it running.

    Water in the intake

gasket looks fine. looks like vortec intake gasket. the heat exchanger is only a half system, so the manifolds would only last a few years in salt water. post a pic of the manifold to riser joint.

    Jet Engine vs Mud motor

jet boats will bounce off big rocks and suck up small rocks, however are generally better for skinny water than a standard outboard. you do loose a lot of efficiency mud motors still have a prop, prop may still hit rocks. Most are lawn and garden motors with a tail fitted, so sound deadening...

    Water in the intake

Since you already yanked the intake, you can not pressure test. Pull the exhaust. If you have rust streaks in the ports, then you have leaking exhaust manifolds I myself would be pulling the motor and do a full teardown and inspection
