oil pressure relief valve is 55 psi on the stock pump (most aftermarket pumps and high performance pumps are available with springs from 70-100 psi). other than maybe too thin of oil at idle you should be about 25-40 psi, at about 1000 RPM and above you should be at relief pressure. anything...
towing without a permit limits your beam. so that is 8'-6" wide max.
that puts you in about a 26' range.

if you have not pulled the prop every year for inspection and greased the shaft, it may not come off willingly. from where you are with the prop nut removed, the prop should slide off the shaft.

make a harness. two pool noodles and a section of heavy 3/4" poly rope. make a y-bridle. the pool noodles are to keep the rope from sinking into your prop.
I would wait to start a restoration until later this year when the prices drop. Resin prices are starting to drop. Plywood pricing is still way high, however slowly coming down. vinyl and foam is still on allocation
they have charts on their websites. for the average 16' boat, maybe a 6' keel guard as you mount it about a foot below the winch eye in the front and back about mid way. on my 19' boat, it was an 8'
