Not really. I mix 4 pounds ground venison with one pound of ground beef. This time I used a spice mix from Owen’s BBQ has a cure right in it. I normally do my own mix so I can keep the cure to a minimum. 5 hours in the dehydrator does the trick.

Five pounds venison jerky. Cheater style with ground meat. My grandkids like it that way.

I wouldn’t worry about it. I cook/smoke loads of meats ground and whole. My smoker rarely gets over 220 most of the time lower. Sometimes I have meat on it for 15 hours.

NFL network ran the game this morning. Handy for those of us the refuse to pay. Good game especially the fourth quater.

We are getting some here also. One inch last night and been drizzling all day. Haven’t heard anyone around here complaining.

No it’s an old masterbuilt electric. I use that smoke tube in the bottom to get more smoke. The chip tray thing is useless. I generally use that smoker only when making cased meats. All the bigger stuff like brisket, ribs, pork butts etc. get done on a stick burner.

Sounds like a plan, and host should always have a slab of venison ham on hand. Seriously we need to get out on the water one of these days👍

Tried a new recipe for venison jalapeño cheddar summer sausage. Only did three pounds just in case it sucked. Have to say I’m pleased with it. Needs more jalapeños and couple more tweaks. I’ll definitely make more.

Yes I’ll make different kinds of sausage, snack sticks, slim Jim’s. I also love straight up venison burgers. That bounty for does is something. Ticks are a problem. This deer had some, one bloated one was on his sack😮

In the local reservoir a picnic table was exposed that washed down during a flood a few years back. It was from a VFW about seven miles away. When they went down to retrieve it a gun was found nearby. That state police took the gun.
