I’d pressure-test the exhaust manifolds and risers, and check for cracks or corrosion. Since both sides have water, I’d also verify the flushing procedure and exhaust shutter condition before running it any further.
That sounds like a great restoration project! Hopefully someone with an original IN-16 can share pictures and measurements to help you get the seating back to factory specs.
Grease color can vary depending on the type and age. If the new one is lubricated properly and there’s no sign of contamination, I wouldn’t worry too much about the color alone.
