12' Starcraft Sea scamp restoration

Hey all I'm working on a sea scamp 12' and need a little help. I would like to put a new coat of paint on it, so I started sanding it with an orbital sander using primarily 100 grit discs. My question is is that the best way to remove the current paint that's on there?

So i thought I world add some pics to help give you all some idea of what I'm working with. Here's a couple of pics of what I started out with:

Here's what it looked like stripped of the seats and most of the hardware:

And here's what I've gotten so far:

So, here's a couple of questions. First was it a bad idea to start on the outside of the boat? I know that she is ok in the water, like no leaks but I've read most people suggest started on the inside first then finish up on the outside. Second, Since this is 12 footer would it be too small to add a platform from maybe the middle seat to the front or the front seat to the front? And lastly, what's the best way to clean out the rivets??
