Spend a few bucks and get a non-contact pyrometer. Your engine should get no hotter than 160 at the extreme. It should run, generally between 125 and 150, until the pressure valve opens at around 2500 RPM and then the temperature should drop to 120 or less.
It may be something as simple as a bum temperature gage. If you have a water pressure gage it should read around 10 psi at 1500 rpm, and close to 30 psi wide open. If you take the telltale small tube from the small inlet and place it on the larger (capped) inlet it will give you a better idea of the pressure. There should be a good healthy stream.
