1979 Merc 200 Whats up with these

In my attempt to have my temperature alarm working I found the senders wire was missing. When I removed the two head bolts securing the temp sender I found the bolts pictured full of carbon or black soot. So my questions are many but start with how did theses bolts get a carbon build up on them. Blown head gasket ?

I will recheck it tomorrow, I forget if it was 125 or 150. I do remember that all cylinders were even. It runs well in a 55 gallon drum. I have never ran it in a lake or other . Thank you for your reply.

I used a reliable compression tester . The cylinders all had readings of between 125 and 129. The 129 reading was on the opposing cylinder to the one from which the bolts pictured came from. All of my spark plugs are extremely clean as if washed . I attribute that to the sea foam in the fuel, not a steam cleaning as I see no sign of H20.
