1982 Johnson 70hp (J70ELCNB) stalling after acceleration... sometimes...

So put the cleaned and rebuilt carbs back on and the motor started right up. Went to the lake and was working fine... for about 2 minutes while at cruising speed the boat stuttered so I shut it off. When I started it back up same problem as before... if I would advance the throttle too far the engine would bog and die. Let it sit for an hour while I fished... started it back up and it ran great. Did three more start/stop cycles with 20-30min sit in between and motor ran fine. I'm completely at a loss for whats going on or what to check next. I dont like the unreliability and would like to try and sort it all out if any of you have any suggestions on what to try next. The fact that it works great and then just doesn't is confusing to me if there was a serious issue with the motor. Thanks guys!

food for thought... could this be an issue caused by float adjustment being wrong... I noticed when I first put on the carbs the lower carb would spill fuel when priming the bulb.... it stopped at some point... but now Im thinking that the float maybe the issue and its getting stuck open and flooding out sometimes...
