1984 - E8RLCRM head gasket questions

I am going to replace the head gasket and thermostat in a few days on my 8HP long shaft motor, and I had a couple of questions. Does anyone know the proper torque for the head bolts on this motor (don't have a service manual yet, and what do you use to clean the head and the block surface? The gasket came off OK but there is some hard residue on the block yet. I tried a plastic scraper tool I had but it did nothing, and a non metal scouring pad cleaned a bit but not enough.

Can't comment on the head torque as I just tighten them down in a cross-alternating pattern.
Couple ideas on cleaning off old gaskets:
Try a razor blade scraper, but be careful not to scratch the machines surface.
Fine sand paper or crocus cloth, emery cloth.
