1988 Merc 60 hp... oh no, now what?

I've recently replaced a 1979 Merc 40 with this 88 60hp. When i test ran the motor before buying(on muffs), there was no water pressure guage installed so water was spewing out of the pressure guage hole. I didn't care too much because i'm going to install a new pressure guage. In the meantime, i installed a brass plug in the hole for the guage. I finally got the boat overhauled, motor hung on the back, and took to service to get electrical for the controls hooked up and a couple other minor things done. I recieved a call from the dealer (whom i ALMOST trust with anything) stating that the water jacket gasket was spewing water out evereywhere... High dollar repair to replace the gasket due to the expectation of wringing off the head of the stainless steel bolts that need to be removed. Any idea on how to make it so these bolts don't break off and how difficult is it to replace that gasket? I REALLY don't want to screw up because the water jacket itself is NLA from Mercury... HELP!!!

NEVERMIND TO ALL OF THIS... I had the dealer do a compression check... 110-110-0 #1 cylinder has a hole blown through it. Motor is good now for parts and for some reason, runs suprisingly well for only 2 cylinders. So...if anybody needs a parts motor...
