1989 5.0 starts hard cold but runs great

I have a 1989 Celebrity SE2 with 5.0 with about 480 hours. The motor runs great and smooth but cold starts hard. Carb was rebuilt 2 seasons ago. Typical startup is just a touch of throttle, turn the key and starts immediately but then goes rough and stalls in just a few seconds. Try again and usually have to go full throttle and crank for 15 seconds or so like it's flooded. Repeat a time or two and then it needs to run a minute or 2 before it smooths out. Smells rich during this time. Once it warms up it runs great and warm restarts are perfect. And ideas on what is happening? Thanks
