You may be able to find any of the following in 1/2", 5/8" & 3/4" for rebuilding the stringers, transom, deck, seat boxes, side panels (may choose 1/4" or 3/8" depending on what was used originally):
Exterior Grade ACX plywood
Auraco
MDO (Medium Density Overlay(looks like it's covered by a brown paper grocery bag)) NOT MDF(medium density fiberboard, the sawdust & glue ply used in knock down, comes in a flat box, DIY furniture)
Underlayment
Douglas Fir Exterior plywood
Marine Plywood
Among others.....

Depends on where you live & buy lumber...

I can't answer your I/O swap questions

I suggest "run what you brung". If you sink $2500 for another used engine/drive plus the cost of all materials for the resto it will by far exceed the value of the boat. And if its running great now why mess with it? Parts are always available used if you look around.

There's a list of the plywood options, find & price locally for you

PB= Peanut Butter consistency poly resin based filler, used for bedding transom & stringers & creating fillets that allow the fiberglass cloth to roll smoothly across transitions between adjoining surfaces: transom to hull, hull to stringers, deck to hull sides etc...

PB can be made w/ or w/out fiberglass fibers, to repair minor dents & dings it's mixed w/out milled fibers.

For more significant damage or structural repairs, the milled fibers are added to the mix, this is often referred to as hairy PB.

Friscoboater calls the resin filler 'Pookie'....

Read thru all the threads in Don's How to post, particularly oops hull extension thread & Friscoboater's thread (his youtube channel is extremely helpful also)
Read thru WoodOnGlass' Blue Flamingo thread & the links in his signature line:
"Fabricating Decks, Stringers, and Transoms"
"My Flamingo"
"Building and Upholstering a Bench Seat"
"Paint Your Boat for Under $100 Bucks"

And get some pix posted in your thread.
