1995 yamaha 6hp 2 stroke stalling when hot

Hello my father bought new in 1995 a 6hp yamaha, this summer i do about a 1 mile or 2 up river and it stalls,I start it up again and same thing we took it to the yamaha dealership twice already and its just charges over charges and they dont fix it.Feels like its over heating... I took the cap off the motor and i could run it longer ?! oh and the water commes out of the side of the motor but is piping hot is this normal?!

Did they change the thermostat and put in a new impeller?

If they did replace them, then you may need to pull the head off and inspect the water passages to see if they're full of corrosion (is it a saltwater motor?). If they didn't, have them changed.

Electronics can fail when they heat up, so that my be the reason it shuts off.

no fresh water only. But if it would be electronics when i take the cap off i wouldnt be able to go a longer distance with out stalling

need to test for spark when it dies to see if that is going away.
simple to test to eliminate that

The water coming out shouldn't be hot, the motor shouldn't be that hot either, if they are you need to fix that first.

What should I do first take the head off ? Can I.blow air in the reverse cycle of the water runs see if there would be junk comming out ? And what would you think would be the reason the water would be piping hot?

Not really a way to revesre the flow with air, you could try though, it won't hurt anything.

Make sure they chnaged both the thermostat and impeller, then take the head off, it's easy and you will only need a gasket or two.

You can also use an IR temperature gun to see what the motor temp actually is.

and frome half throttle to wide open throttle there is hardly a diffrence?!

The carb could also be dirty, that may be an issue too, crud in the fuel system, weak fuel pump, air leak, plugged high speed jet, etc.
