1998 Yamaha 130hp sputtering issue, is it fuel/carbs?

So I went out on the boat yesterday, and the motor has been having some slight issues, and the motor idles perfectly and when engaged and at low RPM's the motor still shows no issue. Once I attempt to get on it and accelerate the motor, it does this funky sputtering, so I immediately pull back and put it back into neutral. Before this occurred, the last time I had taken the boat out, it would shut off once I accelerated enough. Lucky I was troubleshooting and was a few miles out and didn't want to just putt putt all the way in, so I decided to push the ignition key in and slightly choke the motor for a second and boom just like that the motor took off and was running with no flaws. Needless to say, I didn't slow down until I got to the marina. Went home did my due diligence and replaced the water fuel sep. got new spark plugs and checked the fuel for possible water, which I didn't seem to find any over a 24 hour period.

Long story short I turned it back on at home after some struggles and decided as I mentioned above to take her back out and test run her. Got to the marina and she started up (with a little struggle), and I idled till where I would be able to open her up, I wanted to start slowly and as I gradually increased in RPMs this issue arose. I do have a video that I'm trying to cut up and post so someone can see and hear what was going on to possibly help me out. I feel my carbs must be all gummed up, but I'm looking to see if maybe someone has experienced this issue before.

You know that choking(enriching) it helps ,so i would clean the carbs.
maybe off idle passages plugged up as it will idle and run High RPMs, just has a hard time transitioning
