2002 5.0GXI Audible Alarm at Full Throttle

I bought a used 2002 Reinell 200LSE with a 5.0GXI back in May. The boat runs well and gauges read normal but when I have it at full throttle for 20-30 seconds I typically get an audible alarm and the engine goes into limp mode (one long beep, one short beep, pause, repeat). The oil pressure gauge varies from 15 at idle to 70 at WOT and temp gauge never gets above 160deg. When I restart the boat the alarm clears and it runs fine. I have been able to repeat the issue several times. I have also had a few instances where the alarm did not happen at WOT going around 56MPH and around 5000 RPM.

The boat will run at 0-40MPH all day with no issues. When I first got it I likely grenaded the impeller by running it with the flush port. I have found some but not all of the pieces.

So far I have:
-hooked it up to a computer and found the following codes (low oil pressure and telltale set fault code #41). I cleared the codes. Computer said the boat had 142 hours on it (there is no hour gauge).
-replaced the water pump (it was leaking a bit)
-replaced the themostat
-checked the water lines leading to the pump and thermostat (I have not checked the crimped on connections at the bottom of the exhaust manifolds yet)
-changed the cap and rotor which were in bad shape
-changed the engine oil, filter and fuel filter
-checked the outdrive oil
-externally greased the gimbal bearing
-changed the oil pressure sending unit on the bottom rear port side of the engine
-used a heat gun to compare exhaust manifold temp after running and both were right around the same temp
-the previous owner replaced the fuel pump within the last few years

I’m going to have a Volvo Service Center hook it up and diagnose the the issue but they are booked out a few weeks so I thought I’d throw it out there and see if anyone has suggestions on what this could be.

So to update, I wound up replacing both temp sensors on the exhaust manifolds to see if they could be faulty and triggering the alarm. Both of the old sensors appeared to show signs of damage when I pulled them out (see attached pics, there are small holes on the black portion of the old sensors). I took the boat out and ran it up to 5000RPM on several runs with no alarms. I'm going make another trip out to test again soon, but I'm thinking this fixed my problem.

Unable to see for sure but they kind of look like they were there from manufacture due to appear the same. Maybe not, just from my visual.

Don't think I'll ever buy a motor with CATs just to many parameters with to tight a tolerance.
