25' sportcraft floor and stringer replacement, questions

a small bit of spongy floor, lead to a complete removal of sole and stringers. now that most of that has been removed i need to start ordering things in, hopefully you guys can guide me to the amount i'll need.
it is a 1977 sportcraft hardtop, 24' long with engine bracket w/ outboard.
what i think i'll need:
9 gallons of epoxy
2 rolls of 6" biaxle tape
15 yards of 17oz biaxial sheet
6 lbs of wood flour
8 oz of silica
if i'm missing anything please let me know

questions:
- the original stringers were 10" high and 1.75" wide of solid wood of some kind, can i use change the width of the stringers using 2 pieces of 5/8 or 3/4 plywood glued together?
- i would prefer to be able to remove the sole for maintenance or just because, is there a way to put them down without screwing through the fresh stringers?

Ayuh,.... Welcome Aboard,.... Doubled up plywood is used all the time for stringers,...

You can build in hatches for access,.... The sole should be put in Solidly, as it's a part of the hull's Structure....

what i had in mind was attach the sole from the stringers to the hull on both sides with epoxy glue and leaving the center area(stringer to stringer) as a removable hatch. the gas tank pretty much takes up this center area will this affect the structual stregth of the boat, last thing i want to do is damage the boat after all this work but would prefer to be able to access the tank if need without tearing up the floor.
