I know it must be set in the water, in gear and engine warmed up.

Does anyone have any experience on how much to compensate while running it on the muffs? For example, idle speed set at 850rpm will produce 700rpm in the water. I would like to be close before I drop it in the lake and test. Thanks!

Give it an extra 50 rpm over max idle rpm. Then take a screwdriver with you and adjust when in the water, in forward, not tied to the dock.
