Can A bad Thermostat cause restriction in water flow, and is it ok to run with out one?
should it be replaced when the water pump is replaced?

It can restrict the water flow they do give up just like a car one does over time. But no you dont have to replace every time you change impella it should last for quite a few years i replaced mine on a 1994 2years ago 1st time

When I replaced mine, I noticed sand and grit collecting there as well. If you suspect the tstat is causing problems, I would go ahead and replace it. Along with gasket #57 and seal #20...
