Just got the boat, guy I bought it from says mix oil for 50:1 ratio but I wanted to make sure. Is that right for '83 Johnson 2-cyl 60hp?

Re: 50 :1 fuel/oil mixture ??

While shooting for 50:1 is preferred, what is an acceptable range?

The above pint to 6 gallons actually is 48:1.

What happens the other way, at a pint for 7 gallons, or 56:1?
If you are only dealing with a 6 gallon tank, it's easy, but what if you are dealing with 50 to 100 gallon tank? Is is good idea (or safe) to run a large tank with less oil mix every few fill ups (like 56:1)?

While 50:1 is the recommended, it'll run on about anything. It will probably even run on 100:1 for a tank or two without problems. It'll also run on 24:1 but may foul plugs. 50:1 is a goal but not chisled in stone. Just try to get close.
