86 150 xr2 over heat

I have a 86 150 black max xr2 I have put a new temp gauge and sending unit new impeller and housing new poppit and new t-stats I have tried running with t-stats gutted no change. When we put it in gear the temp will be at 160 at idle as soon as I get on a plane it comes up to 180 it will go to 200 and keep going up at wot as soon as i get out of the throttle it starts falling back to 180 is this normal for this motor if not is there something I’m over looking. Any help is appreciated

1) Is overheat alarm working? 2) If so ..does it go off? 3) A temp gauge depending on where sensor is mounted will cause you to chase ghost problems, a water pressure is better. 4) You cannot run motor with t-stats removed, either a 5/16 fender washer or t-stat .

Alarm isn’t working I have to order a new sensor for the alarm the t-stat was gutted it had the piece where the gasket sets still in there but the rest was cut out the temp sensor is located 3/4 of the way up the port side head
