Any problem with just premixing, and isolating the oil pump.

Unfortunately there is more to it than that. Do a search and read all the posts.
Why, do you want to bypass the oil injection? Are you having problems?

older motor, just feel more comfortable running it premixed

and I don't trust the injection system, haven't had any problems

I am also running a 1989 200hp Mercury and plan on keeing it as long as I possibly can. Merc makes a kit for removal if you really want to di it. Do a seach and you should find information. There have been many posts about it.
