All I ever do is cut up potates, heat oil and fry. Usually I add some onion. However, if you Google home fries you will find several thousand variations.

Only once ever ordered home fries at a restaurant and basically got short french fries. Not what I expected.

I start out with leftover baked potatoes, bake more than needed any time you do bakers. Cut into slices, cubes, chunks, or whatever size or shape you like. Fry in whatever oil or butter you like with any and all seasonings you like. I add fresh onion, but timing is everything. I don't like them burnt :D

I like to melt a 1/2 stick of butter and almost fill a frying pan w sliced potatoes and onions,add salt /pepper and cook and flip or stir, scrape the bottom,until brown and crispy w salt and pepper.started doing it while camping.bringing a sack of both.enough for 2 or three days.great for breakfast or dinner.and w franks hot sauce or tobassco and ketchup.

Cut your potatoes into medalions, "THEN BOIL THEM" for 5-10 minutes to get rid of the starch.
Pat dry and drop them into some hot fat.

Cut your spuds into wedges then boil them till 1/2 too 3/4 cooked, drain and lay them out on a cookie sheet with a little butter and olive oil, and dust them with Hidden Valley powdered ranch dip mix on both sides then put them in the oven and turn once till they are golden brown, and enjoy, we even mix up some of the dip and use it as a dipping sauce.

Buy canned white sliced potatoes. Del Monte makes the best. Start by heating some diced onion in bacon fat until soft. Add the sliced potatoes. Add a little paprika...I use smoked paprika. Not much, just enough to give the potatoes some color. The potatoes are already cooked, so don't cook too much. The taste is as good as using fresh potatoes...

This one sounds good, and no unhealthy frying!! Will try :)

Ayuh,... Just a question about yer Title,....
What else besides Potatos would anybody make Home Fries outa,..?? :confused:

And,... While this ain't Home Fries(cause I make mine by dicing leftover taters, 'n fryin' with butter, onion, bell pepper, garlic, 'n salt, 'n pepper)....

I'll introduce ya to Camp Style Taters...

Start with a fryin' pan full of diced raw taters, 'n a chopped onion...Maybe a bell pepper, or whatever else ya wanta try... Salt, 'n pepper to taste,..
Add a pat of butter, then flood everything with water...
Turn on the heat, bring to a boil, then lower to a simmer.... leave it Uncovered...

When the water is gone,...
The taters will be done, 'n your left with a rather tasty creamy white sause, 'n Taters.....;)

That sounds real good Bondo, will have to try it. For camping we take taters sliced in 1/4 inch discs combined with slices of onion and carrots, a pat of butter two tablespoons of Cheezwiz ( preferably the Tex Mex variety) wrap in two layers off tinfoil, then wrap in two layers of soaking wet news paper and a single layer of tin foil, then just throw them in the fire around the edges, turn a couple of times. When you can smell them they are done. Awsome

yum, used dozers recipe!! But next time, after boiling a bit less, Im gonna broil them - oh I also added cheese, the boys and I loved them!!
P.S. Also, I used red taters, Pappys seasoning, garlic powder and sea salt - what was available :)

Diners always boil them first, if you don't like to peel use red bliss.
After they go cold cut them up and start cooking on a flat top with paprika.
A black cast iron skillet works.

Butter.!
Don't cut back, you probably haven't got long to live anyway.:D

We do the potatoes in foil at the campfire but don't use newspaper. Good stuff :cool:

If you are talking about home fries like you might have with breakfast, there have been some great posts....leftover spuds are really good...etc.

But if you mean home fries like you'd have in fish and chips or with burgers, use baking potatoes, well washed, leave the skins on, use a crinkle cutter, put in a bowl and add a tbsp or 2 of good quality oil...olive or grape-seed are good...spread on a cookie sheet and bake at 350 for 25 minutes...turn 1/2 way through cooking.

Works just as well with sweet potatoes.

As most people stated the secret is the pre boiling, Both rice and potatoes have huge amounts of starch, so pre rinse your rice till the waters not white and cut up your spuds and boil them.

I do like the recipe Tim does, quite similiar to the greek style spuds we do.

You need an iron skillet. that is key. cut potatoes in half and then cut into square lengths. I use very little canola oil ( about two to three tablespoons for 3 large potatoes). heat skillit to medium to medium high with oil. I add crushed red pepper to season the oil during pre-heat. Timming is eveything. I test that the temp is correct buy first dropping one piece of potatoe. If it sizzles like bacon I dump the rest and turn them over until the oil has coated all of the potatoes. I set my timer to 5 mins and turn all again at 5-8 min intervals. I do this for 30-40 min. and sometimes a lower the temp near the end. Also salt and pepper during the flipping. If there is any left later I bag em and eat them left over. I all depends ao the stove and cook ware, heat and timing. And there not dripping with grease.
