Any idea why a boat would lean one way or another while on plane?

Believe me, I have thought of those.:) Even when I'm by myself it leans to the passengers side.

A singe prop boat will lean to the left when on plane. It has to to with the prop thrust/torque and the rotation of the prop. Imagine if the prop were held still and the boat spun around the prop shaft. It would spin CCW when viewed from the rear

If your motor is trimmed in too far it can cause the boat to lean to one side. Try trimming the motor out and see if this resolves the issue.
