I'm just trying to make sure I have all this correct before I cut the rear of my boat off. I didn't know if glass sticks to formica or not. I dont know if gel coat will either and I don't know what to use to seal it all up. Thats why I ask maybe I'm a little sloooooooow+

Your building a Form with the Formica/doorskin .. NO glass and gel will not stick to formica ( thats why your going to use it ). Its just used as a form for your Finished Gel sides reinforced with glass ( sorry I did not explain what the formica was used for ).

Your making forms for your glass/finish work all at the same time. Once the gel and glass is lammed..your going to ditch the formica in the trash.

I would think that you would at least need to remove much of the the skin on the transom and attach some glassed diaginal trusses from the top outside rail corner to the bottom just outside of where your cutout will be. That should transfer some of the strength to the lower portion of the transom. I would recommend glassing it for waterproofing and the strength of the glass as well. I will agree with some of the others that even though it may be hollow that it does support a large amount of stress. Some boat builders use hollow stringers and foam cored stringers.
Take your own bones for example your hollow bones are much stronger than if they were solid bone. Not just providing the flex to keep them from breaking but overall strength.
Overbuild!

I have actually done it on my 1988 Gran Sport, if done correct it looks great. I had a fibergalss shop make me the sides and bottom, would never know it was not factory. I would send you a pick but cannot figure out how to add it to this answer
