Couldn't you just run a jumper over from the starter solenoid's 'I' terminal? That would momentarily give the pump juice while cranking, and then it would have to rely on the oil pressure switch, in order to keep running...

Yes that would work fine. I didn't think it was really necessary. Pump will be pumping within about a second anyways. Momentary switch would be nice for priming filter after change or if you run out of gas frequently however the Carter I put on is rated about 72 GPH so It would fill up the fuel bowl pretty quick as long as I had oil pressure.
