I'm installing a new floor for my aluminum Lund and I was wondering what I could do to prevent rot without epoxying / using resin. its going to be covered by vinyl on top

Moisture will get between the wood and vinyl so resin/glass is a good way to protect it.
At that point you will wonder why bother with the vinyl.

Yeah if you are going with vinyl, I'd just resin/cloth and paint with a nice non skid.

Ok, the answer is there is nothing you can put on the wood for your boat that will LONG TERM prevent rot, other than sealing it with some kind of Resin, either Poly or Epoxy.

You could go with MANY MANY coats of marine varnish however, that stuff is not cheap and is actually more money then cheap polyester resin.

Based on the amount of work that is required to properly change the decking...... spend the time and effort and do it the "recommended way" :)
