Any secrets to rebuilding carbs?

I own a 70 hp evinrude which I rebuilt the motor and the carbs. My friend has a 2003 115 yamaha with two carburetors. He's bought the carbs kits and wants me to do it for him. Basically, will there be any surprises?
Without going into long detail are there any steps that I should take?

Pick up a manual for that motor so you will know how to adjust them properly after you put them back on

I know my friend won't be coming over with a manual so i'm thinking of counting the turns on the air mixture screws before removing them completely or not even removing them, the later would seem to defeat the purpose of a rebuild.
On my evinrude, I have to lightly seat the needle then back it off 1 1/2 turns. Then it goes in the water, at idle and in gear and that's where it gets tweaked. I do this with all three carbs.
This is what i'm trying to find out on this 2003 115 yamaha.
