I don't winterize but I do pre-freeze maint. I change the oil, clean the fuel system, and inspect/change the lower unit lube. The big thing is to make sure that there is no water contamination to do damage when it freezes. I used to pump antifreeze into the block but now I simply use compressed air to purge the cooling system on the twin outboards after every trip.
The majority of people here in Alaska put their boats up for winter but I'm underway when conditions, daylight, and my work schedule allow (regardless of temp.).
There is a magical element to hooking into a reel-smoking 30lb chrome bright salmon that melts ice off of the rod guides as it takes off with your gear to into the abyss. I can't think of a better way about getting the blood flowing when it is 6 Deg. F out, blowing 18kts, and the boat and gear is glazed with freezing spray. It's intensely rewarding when that fish finally hits the deck and even more so when it later comes off the grill to melt like butter in your mouth.
