I have done ducks and a goose, I do them with a wild rice stuffing that has cut up fresh apples, raisins, and walnuts or pecans in it.

I buy the duck or goose commercially since i don't hunt, the duck is usually a Long Island duckling and I'm not sure what type of goose it is I buy.

Prime Rib in the Dawg house. That will be on Monday. We are heading up to Stony Lake tomorrow morning to spend a couple of nights at the Irwin Inn. That will be our turkey fix. Then, back on Monday for some serious beef. :D

We go turkey maybe every 2-3 years....definitely not for every celebration. This weekend (Thanksgiving 'Canada Style') will be rack of lamb and oven roasted vegetables (yams, sweet potatoes, parsnips, carrots, reg potatoes, etc....hmmmmmm)

I go to waffle house order up, when done tip the waitress $20 and thank her for doing a thankless job on a day when everywhere should be closed.

I like most Turkey when it's cooked right. Cajun spiced, deep fried Turkey seemed to be all the rage a while back but my favorite for the last few years is brined, slow smoked for 5-6 hours bird. It is important to use only an all natural and not a self basteing or moisture inhanced bird if you brine it overnight with salt, water, sugar and and herbs/spices ( many different brine recipies online ) before smoke cooking, but when done correctly it is worth all the trouble to prepare it and definately not you regular oven roasted bird. Any fowl can be brined before cooking anyway you please and stay moist and tender even if overcooked slightly.

Doing a brace (6) of Ruffed Grouse in the slow cooker, garlic, black pepper, touch of salt, tymne and a pinch of summer savory.
Sweet potato's, Green Beans, Brussel sprouts, and grilled baby red potato's.
Pumpkin pie smothered in Cool Whip.
MGD and a good Single Malt for refreshment.
Wife is up north working, kids are all gone, got a cranky old buddy I'm bringing in for the feast.

Quite often we will do a prime rib roast, many years it is ham, because it is just my wife and I we also have done a large whole chicken, just stuff it and roast it up like a turkey.
