At what temp does a engine overheat?

For instance I have a 89 Evinrude 40hp. If I put a temp guage on what kind should I use and at what temps should I be concerned about overheating

Best temp gauge is your hand if u have to pull away when putting your hand on top its overheating. Dont touch sides, those will be hotter.

But to more directly answer about 175 you enter danger area. Should run just above 150. Anything over 210 shut her down.
