Are all AGM batteries spiral cell designs or is that just Optima's?

Why do the AGM batteries have less Ah capacity than flooded batteries? Is it because the AGM's mats are only 95% saturated?

Also can anybody explain this reserve capacity graph, I tried to understand it, but not sure I do.
