You should be able to see the quadrant. Just turn the wheel until the quadrant is all the way to one side then start turning to the other stop. I don't know bavarias but it was a regular practice for me on getting on a new boat to know how many turns stop to stop and where center was. I usually used a small piece of sail tape to mark the center position on the wheel. If you can't see the quadrant then the other way to determine center is the have the boat tied up and a good spring line lead from the boats bow to the same cleat as the stearn cleat is tied up to and a the stearn cleat tied in tight then put the boat in forward and look for the stearn wake. Turn the wheel until you can see the stream going straight back with no eddies being formed to either side. Not as accurate as looking at the quadrant or rudder but good enough.
