Rule of thumb - the smaler the venturi, the better the acceleration. The larger the venturi, the more possible top rpm.
I wouldn't change too many things at once. Get your motor running correctly with the 1" carbs you have. That will establish your baseline. Then start experimenting with carbs. For instance - if your top capable rpm with an average load is 5400, going to bigger carbs will not help performance, may hurt and will probably use more fuel.
