Best technique for cleaning gasket surfaces?

Took off my exhause manifolds and elbows. What is the best technique for cleaning the mating surfaces? I've heard razor blades and paint thinner works best but wanted some more opinions.

Usually a scraper and some sand paper. But the local auto stores carry a spray gasket remover, which will not be intrusive to the metal.

Use 3" Scoth-Brite Roloc Gasket Removal Discs -- They work awesome. Should be able to pick up at a local automotive store

My amatuer technique is; spray on gasket remover,(block and mask off openings and surrounding area), single edge razor, 80 grit sandpaper on flat sanding block and check for warpage with feeler guage and metal staight edge.
