My experience regarding cooking temp is comparable to yours, Shrew. There's just a lot of heat bouncing around in that stainless steel box (or kettle in your case). What amazes me is the fact that I can touch the outside without searing my hand. When low and slow is the ticket I've been known to fire up the magma immediately after firing up the motor upon launching. By the time the girls, the guests, and the dog are aboard the Magma is already making jealousy inducing smells, and as soon as we get anchored the other boaters start asking what's on the grill. I always keep some extra dogs handy so I can be neighborly. It's that kind of lake.
