I've skiied behind both set ups...both will work, but neither is all that great and with about equal (but with different) issues.
My last boat was a '01 SeaDoo Sportster with a single 135hp. It would PULL a skiier, but you had to be on top of it...absolutely horrible speed control: 1 minute it would want to do 15 mph, you would add just a little throttle, and a few seconds later you'd notice you were going 45mph. I think this was due to the light weight/higher horsepower. Turning could be fun too if the skiier wasn't "cooperating". That being said, we skiied all the time behind it, and had a blast. Of course, now that I have a 19 footer with an i/o, things are much much easier on the driver.
