Whalers don't have a particularly low freeboard for their length; many boats have the same, or more, or less.
The spray is determined by the boat's design at the water line, chines on the side or other deflectors, and the design of the underside of the gunwale or rub rail. Whalers are well designed in this regard, with a turned-over edge at the rub rail. They will, however, throw more water out front than a V running in chop, which will sometimes spray back in a head wind. But with what is essentially a modified tri-hull, that effect is less than a comparable boat with a flat front (like a jon or J series carolina skiff).
The ride will be bumpier than a V in some circumstances. You won't know the difference comparing two small boats; that's a myth. The larger boats get that reputation because it's a boat you can take out when it's rough. So what if it's not as smooth? What are you there for? No one get "beat to death" or "teeth knocked out" riding in one. You're merely comparing a landcruiser to a buick sedan as far as that difference goes.
Whalers are a boater's boat. It's like the "drivers v. passengers" ad. If your idea of "boating" is just riding on a floating sofa on smooth water, you aren't boating and you might not like a whaler. or beer, or steak, or football, or power tools.
