I will be building a new motor for my 1977 Sea Ray 24' Sundancer. It has the GM 350ci in it with the Volvo 280 outdrive. Should I stroke it and go with a 383ci motor?

Why not? Just make sure you use a marine friendly cam.

How about gasoline usage, will it increase a whole lot? Boat has an 100gal tank.

With more power usually comes more fuel consumption, but adversely you could likely turn a larger wheel and slow your rpm's down which would mean actually using less fuel. Basically your engine won't be working as hard as a tired 350.

GM 350ci... Should I stroke it and go with a 383ci motor?

To get to 383 cid, you'll need to bore it also. I recommend doing it, you won't be sorry.

You should have told me you were getting it from Summit. I drove by their place 4 times total on Fri and Sat, I would have picked it up for you! ;) hehehe

That will depend on how hard you push (with your throttle hand!! It'll probably use about the same amount of fuel it used before going the about same speed.....)

Horsepower also = oil consumption! Watch your oil level.

And why is that exactly?? With fresh rings and a properly honed block and refreshed heads, oil consumption should be negligible after break in. Horsepower doesn't = oil consumption, not in my experience anyways.
