The question is about galvanic corrosion.

Can galvanized steel guide-on poles work on an aluminum trailer, or do I need to pursue only aluminum poles... but then as i write this, I realize the hardware is going to be steel anyway -- right?

yeah your going to have issues no matter what you do, obviously your not going to get aluminum nuts and bolts.

I would be interested in how no-alox http://www.homedepot.com/buy/ideal-noalox-4-oz-anti-oxidant-compound-267039.html Would work for this though, I know I have to use it for electrical connections, it may help in your situation. it does not cure but it does harden to a thick paste over time.

Might try cutting some thin pieces of rubber or plastic and place them between the two surfaces where they contact each other.

you wanna use stainless hardware and I'd put rubber (cut up inner tube) between the galvi and alum
