My 17' Larson bowrider looked just like yours this past spring. I replaced only the floor carpet since the side carpet was good, and I didn't want the trouble of tearing it out. Same for the bulkhead carpet. The seam was hidden by an upholstered stow barrier. The original boat was carpeted from gunwale to gunwale with a single piece. Bulkhead separate pieces. My storage locker and gas tank access are separate pieces, like yours. Since you need new side wall carpet, the choice of a single piece is yours. If you can hide the seam with trim like mine, separate wall pieces would be easier. Fitting and forming a full width piece is a bear.
I recommend full, notched trowel adhesive everywhere. Carpet wants to expand an shift over time with humidity and use. Velcro or spot adhesive could result in loose bubbles and ridges.
