Carver 3607 or equivalent on ICW

Hi all,
I currently own a sailboat, but my wife and I are interested in going to a trawler style boat. We have been looking at trawlers, but the Carver 3607 or equiv or a MainShip is interesting my wife because of the nice size aft deck over the aft owners cabin.
I have some questions. Has anyone taken a 3607 with the crusader engines on the ICW? I am worried about the engines loading up as they really would not be run fast. You can't run at 14 kts so that is my concern with gas engines vs diesel.
How is the fuel economy vs a diesel?
We really like the layouts, but are very hesitant due to the twin rather large gas engines that consume large amounts of fuel. I was reading on the 'Carvers Owner' thread and some people were talking 70 gph! I really don't want to see how much gas/money I can use up.
Any insights, etc, would be most appreciated.

I run a Carver 374 gas boat with twin 7.4L Mercruisers. Depending of speed, wind/weather, and tuning you can expect anywhere from 1.7 MPG to .8 MPG. I find that 10 MPH is a nice cruising speed, the engines don't load up (1800 RPM) and I get ~1.2 MPG.
