Have a 1975 Mercruiser inline 6 165hp. and I love it. But I am not found of single controls for shift/throttle. (OK, I am not a young man) Much preferred the old one lever for shift, another for throttle. especially when docking and other slow speed maneuvers. Is there any way to change?

How can moving one lever forward or backward be a problem. Or are you trying to overcome an engine stalling problem by wanting to keep the rpm up high so it won't die?
High rpm shifting is a sure way to kill a drive.

No, my idle is fine, no stalling. Just a matter of personal preference.

Then just get a two lever control and hook the shift cable to one lever and the throttle to the other. Shouldn't be a problem at all.

Ayuh,.... Buy whichever controller you'd like, 'n Install it.... There's 100s to choose from...
