I have a 1996 Bayliner with 5.7 litre looking to convert from mechanical fuel pump to electric...any suggestions or has anybody else done this

why?

a mechanical pump is just under $50. an electric pump, the relays, wiring and oil pressure switch will cost you over $100 and it wont last as long.

Must have the very very last 5.7L ever to roll off the foundry line with a mechanical port on it.

I'd stick with a mechanical given a choice.

most likely a left over 1995 motor (non-vortec)

I'm assuming you have a newer replacement block that doesn't have a provision for a mechanical fuel pump?

you need to wire it up through a oil pressure switch. If you follow the merc wiring diagram you can see how to properly wire it up. The merc pumps are made by airtex which is available at a much lower cost. Just need the correct pump (low pressure for carb applications).
