creamy brown grease in bellows

I have a 1985 Sundancer 260 HP with Alpha 1 pulled unit and looks like water in bellows. The bellows are 2 years old I checked seemed to be OK No waterline in the bellows, no water came out when I pulled apart.This boat is kept in the water all year I pulled boat and removed alpha unit about 20 mins later.Late Aug I replaced impller and it looked good inside> Before I put back together I want to find out what happened Thanks

Probably the seal behind the u-joints is leaking a little bit not to uncommon a small am't won't hurt
