Currently I have F78 14ST C load tires on my trailer. As I understand it, ST205 75D 14C is the newer tire I should be looking for to replace (as a pair, of course). Is this correct? 5 hole wheels that come with should fit on the hubs I currently have?

The tires size is correct.
Most trailer wheels are all 5 on 4.5" bolt pattern, its pretty much the standard but I have seen a few that use other patterns but I'd say 90% of all 5 lug wheels on trailers are 5 on 4.5".

Thanks a bunch. Those 1/2 price jobbers on iboats are just the ticket then.
