I looked for a replacement thermostat and in repair manual, it calls for a 160 so 160-170 temp does not seem unlikely.

My last comment on this issue just so you understand why

A "Stock" motor which has a 140 thermostat in it then it should stay close to 140 degrees and can climb some during hard running. Running 3/4 throttle is not that hard, and I also have similar boat (95 Rinker). A stock motor which has a 140 and climbs to 160 I would start thinking there is a slight restriction somewhere or the impeller/pump way be showing wear.

There is no issue running a 160 in a carb motor so long as your not in the tropics where there is slat water and its warmer. That said if it had a 160 in the motor then at idle it would be at 160, not 140.

Had a 160 in my Formula before rebuild, and it would stay at 160 to 165 even running at WOT. After the repower I'm pushing 530HP and run a 140 thermostat. Boat idles at 140, but when I'm cruising I'm get up to 155 to 160, and WOT its reaching 165

Got ya, Maybe I should change it out to a 140 then, but that still does not explain why the engine just quits. Also I noticed that the timing is at 8, the sticker on the plastic cover says 10 which is where it is at I guess the difference should not matter.
