I had run my own construction business for almost 20 years. Theres always a few jerks but they shutup when they see that you know what you're doing. Now I am semi-retired and my husband is running my business. I just do the paperwork end of it. Go for it. Its a little rough at first but hang in there.

Most offshore charter captains have a deck hand or first mate, and anytime you have more than just one person there, your safety increases dramatically as those that would otherwise try something foolish are more apt to behave themselves. If you do want to go it alone, just make sure your passengers aren't boozing it up just before or during the trip. Most of your passengers will be WAY too into fishing to even be thinking about anything else anyway. They are after all shelling out good money just to go fishing, and if they wanted something else, they could go to vegas for less.
