A 10 Micron filter will have greater resistance to fuel flow. I would recommend you make sure the filter can supply enough fuel for the motor to operate at WOT.

I use the OEM filter when possible or the aftermarket equal and the OEM is 25 micron...

Definately stick with the OEM, but understand that when you add a water seperator your are adding a restriction in the fuel line. It is important that you verify the restriction of the entire fuel system before but more importantly after installation. No more than 4" of mercury. This can be done by a shop statically or you could spend $ (but at the price you could pay for about 2/3 of a shop labor rate) and buy an electric fuel pump of 6-10 psi to simulate the low pressure fuel pumps at WOT.
