Re: Game Meat

Turtle actually is good. I've had it fried and in a soup, I liked the soup better. When ya start eatin' possum/armadillo/coon I'll get worried about ya'll Northerners. I've had them all but stick to the basics now. If I had to go back to that I could but didn't really care much for it back then.

I'd try a lot of things, but turtle just doesn't sound good to me. :)

My crazy friend Scott traps them for part of his living. I've ridden along and helped. You should see the muck they live in. Agriculture is the biggest industry around here and our creeks, rivers , lakes and ponds are nasty. That which does not kill us makes us stronger.....I guess.

Yep, turtle is good too! Soup, fired, BBQ'd, yumm! Ground Hog ain't bad either, but it is tough and needs to be cooked long. It also has a distinct aroma to it that is not so pleasing - so use a lot of garlic and onion to mask the smell ...

Re: Game Meat

Maybe this desk job is getting the best of me. I used to like to eat deer and even squirrel. Back then I would have tried anything. The last deer meat I had a few years ago (jerky) was disgusting to me. I don't think I could even bring myself to eat squirrel again except in a survival situation. Lately, I find chicken to be a little gross to eat. If you've ever been around live chickens you know how nasty they are. I'm beginning to feel the same way about pork. I love to eat it, but the smell of it being cooked nauseates me. :(

I love beef, cooked seafood, sushi, sashimi, frog legs, duck, and aligator. I bet bison would be really good too. I wouldn't mind trying ostrich, snake and turtle too.

We have had live chickens and they are not that nasty. Now, the stuff you buy at the store was raised in a nasty environment that's for sure. In fact all the meat you buy at the store these days was raised in a nasty factory farm. The game meat is certainly no worse. In fact, it's probley better for you.

Somebody will say I'm wrong and might be right so take it for what its worth. We eat quite a bit of wild hog. It gets frozen for about a month before being cooked unless I send some out to be smoked. I've made jerky out of it and its by far the best I've ever had. The wild is so much better than farm raised due to be so lean. When making jerky fat is your enemy and wild has almost none in the meat itself. Its my belief that the freezer is just as good as a high temp for the worms.

You are right about freezing, but it's not clear why high cooking temps are required to kill trichinosis larva in pork.

Government regs vary around 145-170 degrees, about the same as other meats.

Armidllo is a bit gamy but I could eat another if I was hungry. I bet the texans got a good recipe....ah?

I been craving squirrel for a year now and planning to take the boys and the dog along.

Black bear grilled in a big iron skillet tasted better than any steak I've eaten. fried Gator is good. The seminole indians favorite game was alligator. They could catch ( wrestle ) one and wrap his mouth, toss him in the canoe live until they were ready to eat at a later time. Game to GO!
